CHOCOLATE GANACHE: 8 ounces semisweet baking chocolate (from 2 [4-oz.] baking chocolate bars), chopped; 6 ounces bittersweet baking chocolate (from 2 [4-oz.] baking chocolate bars), chopped; 1 1/2 cups heavy cream
