CARAMEL BUTTERCREAM: 1 cup granulated sugar; 1/3 cup water; 1/3 cup heavy cream; 1/4 cup butter, chilled and cut into 1⁄2-inch pieces; 1 cup butter, softened; 4 ounces cream cheese, softened; 1/2 teaspoon vanilla extract; 1/4 teaspoon salt; 4 cups unsifted powdered sugar, divided

CHOCOLATE GANACHE: 8 ounces semisweet baking chocolate (from 2 [4-oz.] baking chocolate bars), chopped; 6 ounces bittersweet baking chocolate (from 2 [4-oz.] baking chocolate bars), chopped; 1 1/2 cups heavy cream

ADDITIONAL INGREDIENTS: Shaved bittersweet chocolate
